溯汐(soseki)位于上海静安区uyao55创意园区内,避开市中心的纷扰喧嚣,环境幽静。店铺的定位也如它的坐标一样,大隐于市,食客在清、幽、雅的用餐空间中可以全身心投入到食材的用料与专业度上。say希望从空间的结构到材质的呈现,都能将美食、文化、设计微妙融合,形成独有的空间体验。

Soseki is located in uyao55 Creative Park, Jing’an District, Shanghai, where the environment is quiet and far away from the hustle and bustle of the city center. The location of the store, like its geographical location, is hidden in the city, so that diners can fully experience the materials and professionalism of ingredients in a clear, secluded and elegant dining space. say hopes to focus on the presentation of spatial structure and materials, and subtly integrate food, culture and design, so as to create a unique spatial experience for diners.

01.
平实的格局

Simple and plain layout

从黑色金属板外立面到门头与店招,便在传递溯汐的低调静谧与避世离俗的气质,这里仿佛是通往奥妙精深的悟道之路的入口,不过分依赖于过路客,一盏素雅的灯光吸引着对美食有着相同审美的食客们,隐蔽又神秘。

From the facade of black metal plate to the door head and shop signboard, it conveys the low-key quietness and seclusion of the world. It seems to be the entrance to the mysterious and profound road to enlightenment, and it will not rely too much on passers-by. A simple and elegant light attracts diners who have the same aesthetic for food, which is both hidden and mysterious.

外立面虽低调严肃,但内部的空间是以素雅温暖为主基调,玄关(Genkan)的踏石(Fumiisi)、内饰柔和的木饰面、板前(Itamae)的桧木(Hinoki),再到对日式折纸工艺延伸的屏风无不是为烘托整个用餐环境朴素舒适、自然的质感。步入店内,映入眼帘的先是一条细窄的玄关(Genkan),穿过玄关步入室内的廊道产生“豁然开朗”的视觉效果,充分起到了室内外过渡的作用。

Although the facade of the whole restaurant is low-key and serious, its internal space is based on simple elegance and warmth. Among them, the Fumiisi in the porch (Genkan), the soft wood veneer in the interior, the Hinoki in front of the board (Itamae), and the screen extending the Japanese origami technology together set off the simple, comfortable and natural texture of the whole dining environment. When you came in here, the first thing that catches your eye is a narrow porch (Genkan). When we pass through the porch and walk into the indoor corridor, the visual effect of “suddenly enlightened” will be produced immediately, and this porch also fully plays the role of indoor and outdoor transition.

布局上植入了四个“盒子”进行划分,用于三种不同的用餐体验,包厢则采用了传统日本和室(Washitsu)的做法,使其空间的分隔更加能够营造出柔和模糊的氛围,同时具备了明亮且私密的空间环境。

In terms of the indoor layout, we implanted four “boxes” and divided them into three different dining experience areas. The design of the box adopts the traditional layout of Washitsu, which makes the separated space more able to create a soft and fuzzy atmosphere and create a bright and private space environment.

02.
自然的质感

Natural-textured interior decoration

在日式的建筑空间总能发现对石、纸、木等自然元素的运用,阐述了东洋美学寂、清、幽的独特的气息,虽身居室内,也可清晰可见自然在室内的融入,溯汐的设计中也无不在展露。板前(Itamae)是寿司师傅展示料理艺术的舞台,空间中构建的弧形天花逐渐向板前处倾斜,光束落在寿司师傅的手上,身后的天然玉石在光照的作用下边缘透着微光,纯净不带有杂质。

We can always find the use of natural elements such as stone, paper and wood in Japanese architectural space, which perfectly expounds the unique flavor of oriental aesthetics, such as silence, clarity and seclusion. Although people live indoors, they can clearly see the integration of natural elements in the interior, which is also revealed in the design of backtracking. Itamae is a stage for sushi chefs to show their cooking art. In this part of the design, the curved ceiling constructed in the space gradually inclines like the front of the board, and the light beam falls on the hands of sushi chefs. Under the action of illumination, the edge of the natural jade behind them is glimmering, which is very pure without any impurities.

屏风除去独特的造型外,设计师在材质上也做了考究,利用纸浆工艺让屏风的表面形成特殊的肌理,为将可持续艺术研究带来更多的可能性,say将工业胶水替换成自制米糊胶,并与碎纸进行糅合调试,让屏风本身散发出淡淡米香,从五感中给予人“返璞”的感受。

In addition to the unique shape of the screen, the designer also made some research on its material. He used pulp technology to make the surface of the screen form a special texture, which brought more possibilities for sustainable art research. Moreover, say replaced the industrial glue with homemade rice paste glue, and combined it with shredded paper for debugging, so that the screen itself can exude a faint rice fragrance, which gives people a feeling of “returning to Pu” from the five senses.

03.
匠心的细节
The ingenuity reflected in the details of space

空间中细节的打造也表现了对日本匠心的敬畏之情,从收银区吧台对于日式传统榫头工艺运用到每个空间中花道(hanamichi)、小景(shoukei)的巧妙打造,确保了空间完整的美感与清雅的意境。

Designers also show awe of Japanese ingenuity in creating details in space. Japanese traditional tenon technology is used in the bar of cashier area, and hanamichi and shoukei in each space are skillfully created, all of which ensure the complete aesthetic feeling and elegant artistic conception of space.

过道的尽头分别做了不同层次的日式干景,几个用餐的空间则做了不同形式的花艺,通过线条、颜色、形态和质感这些写意的手法追寻和谐统一。

In addition, the designer arranged different levels of Japanese dry scenery at the end of the aisle, and adopted different forms of floral art in several dining spaces, aiming at pursuing harmonious and unified artistic conception through freehand brushwork such as lines, colors, shapes and textures.

溯汐并未用浮华的视觉效果博得眼球,而是一种平静、细致、自然地去描绘空间幽雅、静谧的高级气质,极简的内饰下是注重传统美学,注重细节刻画的设计理念。

Soseki does not catch diner’s eyes via flashy visual effects, but only offers diners a calm, meticulous and natural description of elegant and quiet space. Beneath its minimalist interior, Soseki always pay attention to traditional aesthetics and the design concept of detail depiction.
